Vegan Scrambled Tofu Quesadilla

Ingredients

  • 1 tortilla wrap
  • 150g tofu
  • 2 tbsp vegan mayo
  • Seasoning of choice
  • A few pickled cucumbers

Preparation

  1. Fry tofu in a pan with some olive oil for about 10 mins. Season it however you would like to.

  2. Mix the tofu with the vegan mayo (about two large tbsp) and cut the cucumbers into little pieces and combine them as well.

  3. Fry the wrap until cooked then add the filling into one half of the wrap, then fold it into quesadilla shape.

  4. Ready to eat! 😊
