Yogurt Panna Cotta with Fresh Mango

Ingredients

  • 2 cups plain yogurt
  • 2 cups nonfat milk
  • 2 1/4 teaspoons unflavored gelatin
  • 1/4 cup sugar
  • 2 tablespoons honey

Accompaniments

  • Fresh mangos, diced and cubed

Preparation

  1. Bloom gelatin in a small amount of cold water or milk for about 5 minutes to soften

  2. In a saucepan, heat the nonfat milk, sugar, and honey over medium heat until warm and sugar is dissolved, stirring occasionally

  3. Remove from heat, add the bloomed gelatin, and stir until fully dissolved

  4. Allow the mixture to cool slightly, then whisk in the plain yogurt until smooth

  5. Pour the mixture into individual molds or serving dishes and refrigerate for at least 4 hours or until set

  6. Serve chilled, topped with diced and cubed fresh mangos
