Zucchini Savoury Muffs

Ingredients

  • 2 cups cooked quinoa
  • • 2 cups almond meal
  • • 3 eggs beaten
  • • 1 tbsp chia seeds
  • • 2 medium grated zucchini (squeeze the water out)
  • • 1 large handful baby spinach chopped
  • • 1 bunch of chives chopped
  • • Generous with the salt
  • • 1 packet of goats cheese - fold in gently last
  • • 1 tbsp dried onion flakes

Preparation

  1. Makes 6

  2. Mix almond meal + chives & zucchini + baby spinach

  3. Whisk eggs + add chia seeds

  4. Top dry mix with eggs, cooked quinoa

  5. Mix

  6. Gently fold through goats cheese

  7. Divide into muffin tray (6)

  8. Bake for about 40mins (until brown)

  9. Cool for halfa before pulling them out of their muffin cups
