Extra Pumpkiny Zucchini Muffins

Ingredients

  • 2 flax eggs
  • 1 tbsp chia seeds
  • 1/2 cup pumpkin
  • 1/2 cup grated zucchini
  • 1/4 cup pumpkin seeds
  • 1 tsp Vanilla
  • 1-3 drops Monk fruit (or 1-2 tbsp pure maple syrup)
  • 2 tbsp coconut cream
  • 2 tbsp almond butter
  • 1 tbsp coconut oil
  • 1 cup almond flour
  • 1 tsp baking soda
  • Optional: 1 scoop protein or collagen
  • Dash of sea salt
  • 1 tbsp cacao nibs

Preparation

  1. Mix the wet ingredients in a large bowl until creamy

  2. Add the dry ingredients except for the sea salt and cacao and mix until dough forms

  3. Transfer to lined or lightly oiled muffin trays and sprinkle with sea salt and cacao nibs

  4. Bake at 350 for 25-27 minutes or until the center is cooked through
