Cashew Butternut Squash Mac and Cheese

Ingredients

  • chickpea pasta
  • broccoli
  • mushroom
  • egg

Butternut cashew sauce

  • 1/2 cup roasted butternut squash
  • 1/3 cup soaked cashews
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1/4 cup water or bone broth (optional)
  • 1 garlic clove
  • salt and pepper

Preparation

  1. Cook the chickpea pasta according to package instructions

  2. Blend the butternut cashew sauce ingredients until smooth

  3. Sauté broccoli and mushroom until tender

  4. Fry the egg

  5. Mix all ingredients together in a bowl.
