Spicy chili con pumkin
Ingredients
- 1 onion
- 2 garlic cloves
- 2 carrots
- 1 celery rod
- 1 red paprika
- 2tb chili powder
- Vegetablte stock
- 2ts cumin
- Thumb big piece of ginger
- 2ts salt
- Pepper
- 1 can chopped tomatoes
- 1 can kidney beans
- 4 pumkin
- On top: cilantro, lime
Preparation
Chop the onions, saute in a pot
Chop the celery, ginger and paprika, add both to the pot
Add the spices
Add the chopped pumkin and a cup of water with veggie broth
Cook for 10 minutes
Add the tomatoes and beans
Bring it to boil then reduce the heat
Simmer for 20 minutes
Add more salt and spices if needed
Serve with cilantro, lime and bread
