Spicy chili con pumkin

Ingredients

  • 1 onion⁣⁣⁣
  • 2 garlic cloves⁣⁣⁣
  • 2 carrots⁣⁣⁣
  • 1 celery rod⁣⁣⁣
  • 1 red paprika⁣⁣⁣
  • 2tb chili powder⁣⁣⁣
  • Vegetablte stock⁣⁣⁣
  • 2ts cumin⁣⁣⁣
  • Thumb big piece of ginger⁣⁣⁣
  • 2ts salt⁣⁣⁣
  • Pepper⁣⁣⁣
  • 1 can chopped tomatoes⁣⁣⁣
  • 1 can kidney beans⁣⁣⁣
  • 4 pumkin⁣⁣⁣
  • On top: cilantro, lime

Preparation

  1. Chop the onions, saute in a pot⁣⁣⁣

  2. Chop the celery, ginger and paprika, add both to the pot⁣⁣⁣

  3. Add the spices⁣⁣⁣

  4. Add the chopped pumkin and a cup of water with veggie broth⁣⁣⁣

  5. Cook for 10 minutes⁣⁣⁣

  6. Add the tomatoes and beans⁣⁣⁣

  7. Bring it to boil then reduce the heat⁣⁣⁣

  8. Simmer for 20 minutes⁣⁣⁣

  9. Add more salt and spices if needed⁣⁣⁣

  10. Serve with cilantro, lime and bread⁣⁣⁣ ⁣⁣⁣
