Peanut Butter and Jelly Bites

Ingredients

  • 120g smooth peanut butter
  • 45g coconut flour
  • strawberry jam

Optional

  • a bit of sugar for sweetness

Preparation

  1. Mix together the peanut butter and coconut flour in a bowl until a dough forms. Optionally, add a bit of sugar for sweetness and chill in the fridge for half an hour before proceeding.

  2. Split the dough into 6 balls and flatten each one in the palm of your hand. Fill with 1/2 to 1 teaspoon of jam and fold over the edges to form a ball again.

  3. Place all the prepared balls on a baking tray and freeze for around 3 hours.

  4. Leave the bites to thaw before eating and store in the fridge for up to 3-4 days.
