Easy Apple Caramel Pie

Ingredients

  • 1 pinch of salt
  • 50g sugar/coconut blossum sugar/xylit etc.
  • 180g cold vegan butter/margarine
  • 50g soy yogurt
  • kg apples •80g sugar ( I used 30g xylit and 50g coconut blossum sugar for a caramel-like flavour) •juice of 1/2 lemon •3 tsp ceylon cinnamon
  • 40g vanilla pudding powder

Preparation

  1. Peel the apples and cut them into pieces (the smaller they are, the easier it is to eat the cake later

  2. Mine were pretty big ?)

  3. Mix with the rest of the ingredients in a big bowl

  4. Take 1/3 of the dough and put it aside. Roll out the first part (~0,5-1cm) and press it in a well oiled baking form. Adjust the sides (see pictures). Use a fork to make a few holes in the ground of the dough.Preheat the oven to 180°C/350°F upper and lower heat. Put the filling on the dough, roll out the rest of the dough and cut little stripes. Place them on the cake

  5. Optinal: sprinkle some more coconut blossum sugar on top. Bake for ~45-60min until it's golden brown
