Easy peasy Chorizo Baked Beans

Ingredients

  • 1 onion
  • 100g chopped chorizo
  • 100g chopped pancetta or smoky bacon
  • 1 tbsp olive oil
  • 1 tin rinsed cannellini beans or any white bean
  • 200ml passata
  • 1 tsp smoked sweet paprika
  • 1 tbsp maple syrup
  • 1 tsp balsamic vinegar

Preparation

  1. Fry off 1 onion, 100g chopped chorizo, and 100g chopped pancetta or smoky bacon in 1 tbsp of olive oil until the onion is cooked and the lovely red oil comes out of the chorizo.

  2. Add a tin of rinsed cannellini beans (or any white bean), about 200ml of passata, 1 tsp of smoked sweet paprika, 1 tbsp of maple syrup, and 1 tsp of balsamic vinegar.

  3. Season, bring to the boil, then pop in the oven uncovered for 30 minutes at 200°C.

  4. Serve with a fried egg.
