Our Cashew Ricotta Cheese Stuffed Shells


  • 3 tbs of olive oil
  • 1 tsp of fresh oregano
  • 4 cloves of garlic
  • 2 1/2 cups of chopped tomatoes
  • 18 jumbo pasta shells
  • 1/4 cup of sliced basil
  • ingredients for cashew cheese
  • 1 1/2 cup of soaked cashews soaked overnight with 1/2 cup of filtered water
  • 2 tbs of apple cider vinegar
  • 1/2 tsp of pink himalayan salt
  • 4 tbs of nutritional yeast


  1. In a pot on medium heat add olive oil, garlic, and oregano

  2. Stir until fragrant and add tomatoes

  3. Allow to simmer uncovered for 20 minutes stiring every few

  4. Combine all ingredients for cashew cheese into a blender or food processor

  5. Remove cheese when finished, add fresh basil and stir well

  6. In a large pot bring water to a boil and add pasta

  7. Cook according to directions

  8. When finished drain pasta and set aside

  9. On a plate or dish of choice add tomato sauce leaving some set aside for later

  10. Stuff shells and add to plate

  11. Top with remaining tomato sauce and extra fresh basil

  12. Garnish with nutritional yeast flakes and enjoy ???? #threebunnies
