Our Vegan Black Bean Tostadas

Ingredients

  • 2 jumbo tortillas
  • 3/4 cup rice of choice
  • 1 1/2 cups of soaked black beans
  • 1 tsp of olive oil
  • 2 cloves of minced garlic
  • 1 sliced orange bell pepper
  • 1 sliced yellow bell pepper
  • 1 tsp of chili powder
  • 1/4 tsp of black pepper
  • 1/4 tsp of pink himalayan salt
  • 1/4 tsp of oregano
  • 1/4 tsp of cumin
  • 1/4 tsp of paprika
  • 2 big handfuls of spinach and arugula
  • 2 mashed hass avocados
  • 1/2 cup of chopped tomato
  • juice of one lime

Preparation

  1. Preheat oven to 350°f and bake tortillas for 3 min each side

  2. In a medium sized pan, on medium heat, add olive oil, garlic, and bell peppers

  3. Cook for 5 to 8 minutes, stirring occasionally

  4. Set aside when finished

  5. In a small pot, on medium heat, add beans, seasonings, and stir well

  6. Set aside when finished

  7. Once tortillas are ready place cooked rice of choice and beans on top

  8. Followed by bell peppers, leafy greens, smashed avocado and tomatos

  9. Garnish with sliced jalapeños and red pepper flakes and enjoy ???? #threebunnies
