Raw Vegan Sushi Burritos

Ingredients

  • CITRUS ALMOND GINGER DIP
  • - 1 tbsp almond butter - 1 to 2 tbsp orange juice - 1/2 tsp ginger powder
  • Stir together until uniform. •

Preparation

  1. All I did was take two nori sheets, wet the ends, and stick one end on top of the other to form a double length nori sheet

  2. Then ride about 1/4 of a head of raw cauliflower (aka blitz in your food processor until it looks like rice.)

  3. Find all the veggies you can in your fridge and cut them into VERY thin long strips or shorter shredded pieces

  4. Find some kind of spread you'd like to use: hummus, tahini, etc

  5. Spread your riced cauliflower over ONE nori sheet and into a square shape but make sure to leave about 1/2 and inch of space on the sides (so you have a small square inside of your nori square)

  6. Spread your spread (haha) in a horizontal line in the middle of the cauliflower square

  7. Place all your veggies in a line on top of your spread

  8. Start rolling the burrito up. Roll over the entire pile of filling then start rolling normally, making sure every couple of inches to wet the untouched nori sheet to help it all stick together (do this at the end too to make sure it's completely sealed.)

  9. Cut your burrito in half and you're done
