Bank Holiday Breakfast Bowl with Quinoa and Cinnamon

Ingredients

  • 1 cup quinoa flakes
  • 2 cups coconut milk
  • 1/4 tsp raw cinnamon powder
  • 1 tbsp cacao nibs

Toppings

  • fig
  • walnuts
  • cinnamon
  • cashew butter
  • ground cacao nibs
  • cacao nibs
  • honey

Preparation

  1. Put all ingredients in a pan, bring to a gentle simmer, and stir.

  2. Top with fig, walnuts, cinnamon, cashew butter, ground cacao nibs, a few cacao nibs, and drizzle with honey.

  3. Note: This makes one good-sized bowl and is creamy and lighter than porridge.
