Cheesy Egg and Bean Boat

Ingredients

  • 70g wholemeal bun
  • 40g grated mozzarella
  • Baked beans
  • 1 egg
  • Peashoot salad
  • Chives
  • Smoked paprika flakes
  • Sea salt

Preparation

  1. Cut around the top of the bun and press it to the bottom.

  2. Partially cook the baked beans.

  3. Add the partially cooked beans to the bun.

  4. Cook the egg until the white is still slightly wet, using a single egg pan to keep it round.

  5. Place the egg on top of the beans in the bun.

  6. Sprinkle the grated mozzarella around the egg.

  7. Bake in a 200°C oven for 5 minutes until the cheese starts to brown.

  8. Prepare the peashoot salad and season with chives, smoked paprika flakes, and sea salt.
