Vegan Gluten-Free S’mores Cookies

Ingredients

  • 1 1/2 cups gf flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup vegan butter
  • 1/3 cup unsweetened applesauce
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/4 cup cashew milk
  • 1/2 cup chocolate chips
  • Marshmallows
  • Maldon salt

Preparation

  1. Preheat oven to 375°F

  2. Slice marshmallows in half using clean scissors.

  3. In a bowl, mix together the gf flour, baking soda, and sea salt

  4. In another bowl, cream the vegan butter, unsweetened applesauce, coconut sugar, and vanilla extract

  5. Add cashew milk to the wet ingredients and mix well

  6. Combine the wet and dry mixtures until just blended

  7. Stir in the chocolate chips

  8. Drop spoonfuls of dough onto a baking sheet

  9. Top each cookie with a sliced marshmallow half

  10. Bake for 10 minutes.

  11. Remove from oven and sprinkle with Maldon salt
