Vegan Gooey Chocolate Slice Dessert

Ingredients

Chocolate biscuit base

  • 1 cup of rolled oats
  • 1/2 cup of cashews
  • 1 tablespoon of chocolate protein powder
  • 1 tablespoon of cacao powder
  • 1 tsp of vanilla extract

Chocolate filling

  • 200g medjool dates
  • 1 tsp of the leftover date water
  • 1 tablespoon of chocolate protein powder
  • 1 teaspoon of cacao powder

Chocolate top

  • 100g of vegan cooking chocolate
  • 1 tsp of coconut oil

Preparation

  1. Soak 200g medjool dates for 20 minutes in boiling water and remove pips.

  2. Combine chocolate biscuit base ingredients in a blender.

  3. Press the mixture into a tin and place in the freezer.

  4. Clean the blender.

  5. Combine chocolate filling ingredients in a blender.

  6. Spread the filling onto the biscuit base and place in the freezer for at least 4 hours.

  7. Melt chocolate top ingredients together.

  8. Pour onto the chocolate filling and place in the freezer for at least 30 minutes before cutting.
