Miniature Apple Pies with British Bramley Apples

Ingredients

  • sheet of puff pastry
  • 1 bramley apple, diced
  • 50g sweetener or sugar
  • 25g vegan block
  • 1/2 tsp cinnamon

Topping

  • 1 tbsp sweetener or sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 tsp sesame seeds

Preparation

  1. Preheat oven to 190C. Meanwhile warm butter in a pan on a medium heat. Pour in the sugar or sweetener and stir until a thick syrup forms.

  2. Add in the chopped apples and cook for a further minute. Remove from heat and allow to cool.

  3. Roll out your pastry sheet and slice into four large rectangles. Add 2 tbsp filling in the centre of each piece and fold over pastry to form a pie.

  4. Press edges with a fork, lightly spread with melted butter and sprinkle over topping.

  5. Bake in the oven for 10 minutes until golden. Allow to cool slightly before serving and enjoy (I paired mine with a drizzle of salted caramel sauce!)
