Zingy Passion Fruit and Mango Chia Pudding

Ingredients

  • 1 good handful of frozen mango
  • 2 passion fruits
  • Juice of 1 lime
  • 150ml water
  • 2 tablespoons chia seeds

Optional additions

  • Coconut yogurt
  • Additional passion fruit
  • Juice of 1/4 lime

Preparation

  1. Blitz the mango, passion fruits, lime juice, and 150ml water together until smooth.

  2. Stir in the 2 tablespoons of chia seeds.

  3. Place the mixture in a jar and fill with water until 3/4 full.

  4. Stir well to combine.

  5. Seal the jar and leave in the fridge overnight.

Serving suggestions

  1. In the morning, add a large dollop of coconut yogurt and more passion fruit.

  2. For extra zing, mix the juice of 1/4 lime with the coconut yogurt before adding.

  3. Blend the pudding again to make a smoothie or smoothie bowl.
