Edamame Balls

Ingredients

  • 2 cups frozen edamame
  • 1/2 red onion
  • 2 garlic cloves
  • handful of chives
  • handful of mint
  • 1 tsp ground coriander
  • 1 tsp ground cumin

Preparation

  1. Steam your edamame for 10 minutes until soft and preheat the oven to 180 degrees.

  2. Add all of the ingredients including the edamame to a food processor and pulse until combined

  3. Roll into golf ball sized balls and cook for 25-30 minutes

  4. I served mine with a fresh kale and spinach from the garden, blueberries, capsicum and cucumber. With a simple dressing on the side which was honey, whole grain mustard and lemon juice
