Roast Vegetable Goodness

Ingredients

  • Bulgur
  • sweet potato
  • zucchini
  • garlic
  • thyme
  • black pepper

Preparation

  1. Bulgur boiled in vegetable stock (or spices of choice, such as garlic, onion and chilli powder!)

  2. Hummus

  3. Roasted sweet potato, zucchini and bellpepper with a seasoning of garlic, thyme and black pepper

  4. All combined with some sundried tomatoes, cocktail tomatoes and avocado. And why not fry some tofu until crispy and add on top
