Vegan French Onion Soup

Ingredients

  • 3 tbsp vegetable oil
  • 6 cups onions
  • 3/4 cup lager or white wine
  • 1 tsp basil
  • 1 tsp oregano
  • 2 bay leaves
  • 4 tbsp miso
  • 6 cups vegetable broth
  • 4 slices toasted baguette
  • 2 cups grated vegan cheese

Preparation

  1. In a large saucepan, sauté the onions in oil, over medium heat until lightly browned and tender, stirring occasionally for about 15 minutes

  2. Add the beer and bring to a boil and let reduce 3 minutes

  3. Add basil, oregano, bay leaves, miso, vegetable broth and bring to a boil

  4. Simmer for about 30 minutes

  5. With the rack in the middle position, preheat the oven’s broiler

  6. Ladle the soup into four heat resistant bowls

  7. Place a slice of bread on each soup and cover with the cheese

  8. Place the bowls on a baking sheet and broil in the oven until the vegan cheese has melted
