Easter Chocolate Baked Oats

Ingredients

  • 60g rolled oats
  • 3 tbsp boiling water
  • 2 tbsp plain yogurt
  • 25g chocolate (such as @nomochocolate)
  • 1/2 tsp baking powder
  • Squeeze of lemon juice

Preparation

  1. Preheat the oven to 180°C/350°F/gas 4.

  2. In a bowl, combine the oats, boiling water, lemon juice, and baking powder. Let it sit for 5 minutes.

  3. Stir in all the other ingredients except for the chocolate.

  4. Line a shallow baking dish or small ramekin with baking paper. The size of the dish can vary as the mixture is thick. Alternatively, triple the quantity and use a shallow 8-inch cake tin.

  5. Pour the mixture into the baking dish and sprinkle chocolate chunks on top. Bake for 20 minutes.
