Sweet Potato Chocolate Pudding

Ingredients

  • 1 medium sweet potato
  • 1/3 cup Organic Cacao Powder (Raw)
  • 1 tbsp maple syrup or 1 date
  • 2 tbsp nondairy milk or water
  • OPTIONAL: 1/2 tsp vanilla extract
  • OPTIONAL: Pinch of sea salt
  • OPTIONAL: Organic Cacao Nibs - topping

Preparation

  1. Bake the sweet potato whole until soft, then peel and roughly chop it.

  2. If using a date, soak it in water, drain, and remove the seed.

  3. Combine all ingredients in a high-speed blender and blend until smooth, scraping the walls if necessary.

  4. Enjoy the pudding right away, optionally sprinkled with cacao nibs, or place in the refrigerator to cool for about an hour to harden.
