Sugar-Free Low-Fat Chestnut Waffles
Ingredients
- 100 g cooked, peeled chestnuts
- 120 g vegan butter or coconut oil, soft, in pieces
- 130 g Erythritol
- 1 tsp vanilla sugar
- 2 eggs
- 250 g milk
- 250 g chestnut flour
- 1/2 tsp baking powder
- 2 pinches salt
- Coconut oil for greasing
Preparation
Roughly chop the chestnuts, place them with the milk in a pot, and cook over medium heat for 5-10 minutes until soft, then puree everything
Beat the sugar with the eggs until foamy
Mix the flour, baking powder, and 2 pinches of salt together
Melt the butter in a small pot over medium heat and let it cool slightly
Stir the chestnut puree with the sugar-egg mixture, the flour mixture, and the liquid butter, preferably with a hand mixer
Cook the batter in a waffle iron greased with coconut oil until golden and crisp
For the maronicrunch, chop the remaining chestnuts into small pieces and roast them in a pan with the remaining butter over medium heat
