Sugar-Free Low-Fat Chestnut Waffles

Ingredients

  • 100 g cooked, peeled chestnuts
  • 120 g vegan butter or coconut oil, soft, in pieces
  • 130 g Erythritol
  • 1 tsp vanilla sugar
  • 2 eggs
  • 250 g milk
  • 250 g chestnut flour
  • 1/2 tsp baking powder
  • 2 pinches salt
  • Coconut oil for greasing

Preparation

  1. Roughly chop the chestnuts, place them with the milk in a pot, and cook over medium heat for 5-10 minutes until soft, then puree everything

  2. Beat the sugar with the eggs until foamy

  3. Mix the flour, baking powder, and 2 pinches of salt together

  4. Melt the butter in a small pot over medium heat and let it cool slightly

  5. Stir the chestnut puree with the sugar-egg mixture, the flour mixture, and the liquid butter, preferably with a hand mixer

  6. Cook the batter in a waffle iron greased with coconut oil until golden and crisp

  7. For the maronicrunch, chop the remaining chestnuts into small pieces and roast them in a pan with the remaining butter over medium heat
