Buttermilk Gingerbread Waffle

Ingredients

  • 1 cup plain flour (wholemeal)
  • 1 cup soya milk
  • 1 tsp baking powder
  • 2 tsp coconut sugar
  • 1 tsp ginger
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • 1 tbsp apple cider vinegar

Preparation

  1. Mix the soya milk and apple cider vinegar in a bowl and set it aside for 10 minutes. This will create buttermilk.

  2. In a separate bowl, mix together the remaining dry ingredients.

  3. Pour the buttermilk into the bowl with the dry ingredients. Stir well to combine the batter.

  4. Use the batter in your waffle machine, cooking for 8-9 minutes.

  5. Alternatively, if you don't have a waffle machine, you can bake the batter in the oven with waffle molds for 10 minutes at 200°C.
