Easy Vegan Cauliflower Mash for Thanksgiving

Ingredients

  • 1 small head of cauliflower
  • 2-3 cloves of garlic
  • 1 tbsp vegan butter @earthbalance
  • 2 tsps Rosemary
  • Salt & Pepper to taste

Preparation

  1. Start by chopping up your cauliflower and steaming it until it’s super soft and a fork can easily pierce it.

  2. Drain the liquid and blend it in a food processor until it’s smooth.

  3. Sauté your minced garlic with the butter, or use olive oil if preferred, noting that butter mimics classic mashed potatoes.

  4. Add your mashed cauliflower and rosemary to the pan.

  5. Cook for just a couple of minutes until the flavors mix together.

  6. Then add your salt and pepper to taste.
