Quick and Easy Chickpea Tuna Sandwich

Ingredients

  • 2 cups of whole soaked chickpeas
  • 1/4 cup of vegan mayo
  • 1 tsp of stone ground mustard
  • 2 tsp of white vinegar
  • 1/4 tsp of pink himalayan salt
  • 1/8 tsp of black pepper
  • 1/4 cup of chopped celery
  • 1 tbs of sliced green onion
  • Whole wheat bread
  • Baby spinach
  • Arugula

Preparation

  1. Combine the first 6 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined.

  2. Add celery and green onion and stir to distribute evenly in the mixture.

  3. Place leafy greens onto a slice of bread, top with the mixture, garnish with fresh cracked black pepper or cayenne, press the other slice of bread on top, and enjoy.
