Quick and Easy Chickpea Tuna Sandwich
Ingredients
- 2 cups of whole soaked chickpeas
- 1/4 cup of vegan mayo
- 1 tsp of stone ground mustard
- 2 tsp of white vinegar
- 1/4 tsp of pink himalayan salt
- 1/8 tsp of black pepper
- 1/4 cup of chopped celery
- 1 tbs of sliced green onion
- Whole wheat bread
- Baby spinach
- Arugula
Preparation
Combine the first 6 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined.
Add celery and green onion and stir to distribute evenly in the mixture.
Place leafy greens onto a slice of bread, top with the mixture, garnish with fresh cracked black pepper or cayenne, press the other slice of bread on top, and enjoy.
