• 2 cups of whole soaked chikpeas
  • 1/4 cup of vegan mayo (we used @hamptoncreek
  • 1 tsp of stone ground mustard
  • 2 tsp of white vinegar
  • 1/4 tsp of pink himalayan salt
  • 1/8 tsp of black pepper
  • 1/4 cup of chopped celery
  • 1 tbs of sliced green onion
  • whole wheat bread
  • baby spinach
  • arugula


  1. Combine first 6 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined

  2. Next throw in celery and green onion and stir to distribute evenly in mixture

  3. Place leafy greens onto a slice of bread and top with mixture, garnish with fresh cracked black pepper or cayenne, press other slice of bread on top and enjoy???? #threebunnies
