Sandwich
Ingredients
- 2 cups of whole soaked chikpeas
- 1/4 cup of vegan mayo (we used @hamptoncreek
- 1 tsp of stone ground mustard
- 2 tsp of white vinegar
- 1/4 tsp of pink himalayan salt
- 1/8 tsp of black pepper
- 1/4 cup of chopped celery
- 1 tbs of sliced green onion
- whole wheat bread
- baby spinach
- arugula
Preparation
Combine first 6 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined
Next throw in celery and green onion and stir to distribute evenly in mixture
Place leafy greens onto a slice of bread and top with mixture, garnish with fresh cracked black pepper or cayenne, press other slice of bread on top and enjoy???? #threebunnies
