Tempeh & Baby Bok Choy Stir Fry
Ingredients
- 1 bunch of baby bok choy (or your favourite greens), washed and chopped
- 1 packet of tempeh, diced
- 4 small shallots green tips, sliced
- 1 tablespoon tamari sauce
- 2 tablespoon melted coconut oil
- a pinch of white pepper
- 2 red chilli, sliced (optional)
Preparation
Using medium to high heat, heat oil in a wok, add tempe. Drizzle half a tablespoon of tamari sauce and cook for 3 minutes, stirring occasionally until brown on all sides
Add shallot, stir for 2 minutes
Add baby bok choy, stir for 2-3 minutes. Add tamari sauce, pepper and chilli if using
Stir until the greens are just cooked
