Tempeh and Baby Bok Choy Stir Fry

Ingredients

  • 1 bunch baby bok choy
  • 1 packet tempeh
  • 4 small shallot green tips
  • 1 tablespoon tamari sauce
  • 2 tablespoons melted coconut oil
  • a pinch white pepper
  • 2 red chilies (optional)

Preparation

  1. Using medium to high heat, heat oil in a wok, add tempeh, drizzle half a tablespoon of tamari sauce and cook for 3 minutes, stirring occasionally until brown on all sides

  2. Add shallot, stir for 2 minutes

  3. Add baby bok choy, stir for 2-3 minutes, add tamari sauce, pepper and chili if using

  4. Stir until the greens are just cooked
