Blueberry Oatmeal Blender Pancakes

Ingredients

  • Gluten free rolled oats
  • Ripe bananas
  • Milk of choice
  • Blueberries
  • Flax egg (ground flax seeds + water)

Preparation

  1. Prepare the flax egg by mixing ground flax seeds with water and letting it sit for 5-10 minutes to gel.

  2. In a blender, combine the gluten-free rolled oats, ripe bananas, milk of choice, and the prepared flax egg. Blend until smooth.

  3. Gently fold in the blueberries to the batter.

  4. Heat a non-stick skillet or griddle over medium heat.

  5. Pour 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
