Fresh and Easy Tuna, Heart of Palm, and Tomatillo Salad

Ingredients

  • 2 cans of tuna in water (Atun Dolores)
  • 1 can of hearts of palm in water
  • 2 tomatillos
  • 1/2 seedless cucumber
  • 2 green onions
  • 1/4 cup panela cheese, cubed
  • Seaweed cut into strips
  • 1/2 avocado, cubed (reserve the other half for an avocado rose)

Preparation

  1. Shred the tuna and dice all other ingredients into small, uniform cubes.

  2. Add olive oil, juice of 1 lime, 1 tsp apple cider vinegar, salt, and pepper. Mix everything and top with an avocado rose, more seaweed strips, and cubes of fresh panela.

  3. Serve with salted crackers, toast, or as a sandwich.
