Fresh and Easy Tuna, Heart of Palm, and Tomatillo Salad
Ingredients
- 2 cans of tuna in water (Atun Dolores)
- 1 can of hearts of palm in water
- 2 tomatillos
- 1/2 seedless cucumber
- 2 green onions
- 1/4 cup panela cheese, cubed
- Seaweed cut into strips
- 1/2 avocado, cubed (reserve the other half for an avocado rose)
Preparation
Shred the tuna and dice all other ingredients into small, uniform cubes.
Add olive oil, juice of 1 lime, 1 tsp apple cider vinegar, salt, and pepper. Mix everything and top with an avocado rose, more seaweed strips, and cubes of fresh panela.
Serve with salted crackers, toast, or as a sandwich.
