Sunshine and Sushi Bowls

Ingredients

  • 2 julienne cut carrots
  • 1/4 of a small purple cabbage sliced
  • 1/2 a cucumber sliced in half moons
  • 1 diced avocado
  • sushi or brown rice
  • thinly sliced nori sheets
  • sesame seeds

Preparation

  1. Cook the sushi or brown rice according to package instructions

  2. Prepare the vegetables by julienning the carrots, slicing the purple cabbage, slicing the cucumber into half moons, and dicing the avocado

  3. Assemble the sushi bowl in a serving bowl by placing the rice at the bottom, adding the prepared vegetables, and topping with thinly sliced nori sheets and sesame seeds
