Sweet and Savory Sweet Potato Breakfast Bowl
Ingredients
- 1 egg
- ghee (from Fourth & Heart)
- Brussels sprouts
- sweet potato chips
- 1/2 avocado
- berries
Preparation
Prep vegetables in advance if desired for easier assembly.
Roast Brussels sprouts at 400°F for 45 minutes.
Roast sweet potato chips at 400°F for 20 minutes on each side.
Fry 1 egg in ghee for a crispy texture.
Assemble the bowl with roasted Brussels sprouts, sweet potato chips, fried egg, sliced avocado, and berries.
Optionally heat the bowl before serving, or enjoy it cold for simplicity.
