Sweet and Savory Sweet Potato Breakfast Bowl

Ingredients

  • 1 egg
  • ghee (from Fourth & Heart)
  • Brussels sprouts
  • sweet potato chips
  • 1/2 avocado
  • berries

Preparation

  1. Prep vegetables in advance if desired for easier assembly.

  2. Roast Brussels sprouts at 400°F for 45 minutes.

  3. Roast sweet potato chips at 400°F for 20 minutes on each side.

  4. Fry 1 egg in ghee for a crispy texture.

  5. Assemble the bowl with roasted Brussels sprouts, sweet potato chips, fried egg, sliced avocado, and berries.

  6. Optionally heat the bowl before serving, or enjoy it cold for simplicity.
