Vegan Banana Crêpes

Ingredients

  • 100 g oat flour
  • 30 g spelt flour
  • 15 g corn starch
  • 200 ml plant-based milk
  • 100-140 ml sparkling water (or more if needed)
  • 1 ripe banana

Preparation

  1. In a blender, mix the plant-based milk, sparkling water, and ripe banana until well combined.

  2. In a bowl, combine the oat flour, spelt flour, and corn starch.

  3. Pour the wet mixture into the bowl of dry ingredients and mix well. Add more sparkling water if needed to achieve a runny dough consistency, unlike the dough for American pancakes.

  4. Heat a nonstick skillet over medium heat.

  5. Pour a ladle of the crêpe mixture into the pan, moving the pan quickly with your hands to ensure the mixture covers the whole pan.

  6. Cook until you see some bubbles forming on the surface of the crêpe. Loosen the edges with a spatula and carefully flip it over.

  7. Cook the other side until golden brown.

  8. Fill the crêpes with your desired fillings such as rhubarb compote, jam, peanut butter, vegan Nutella, etc.

  9. Serve the crêpes warm and enjoy!
