Pumpkin Shaped Gnocchi with Sauce

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 large russet potato, peeled and cut into large chunks
  • 1 cup pumpkin puree
  • 1 tsp salt
  • 1/8 teaspoon ground nutmeg (Optional)

Pumpkin sauce

  • 1 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 5 to 6 garlic cloves, chopped
  • 3/4 cup milk
  • 1/2 cup heavy cream
  • 3 tbsp mashed pumpkin
  • 1/4 cup Parmesan cheese
  • Pinch of salt
  • 1/8 teaspoon black pepper

Preparation

  1. Boil the potato until tender, then mash it.

  2. Mix the mashed potato with pumpkin puree, flour, salt, and optional nutmeg to form a dough.

  3. Shape the dough into small pieces and form them into pumpkin shapes.

  4. Cook the gnocchi in boiling salted water until they float to the surface, then drain.

  5. For the sauce, melt butter in a skillet over medium heat.

  6. Sauté the chopped onion and garlic until softened.

  7. Add milk, heavy cream, mashed pumpkin, Parmesan cheese, salt, and pepper, then simmer until thickened.

  8. Toss the cooked gnocchi with the sauce or serve it on top.
