Spring Salad with Fried Goat Cheese Bites
Ingredients
Goat cheese bites
- 10 oz log of goat cheese
- 1/4 cup coconut flour
- 2 eggs
- 1 cup gf panko breadcrumbs
Strawberry balsamic vinaigrette
- 1 tbsp maple syrup
- 4 tablespoons olive oil
- 2 tbsp balsamic vinegar
- 1 tsp apple cider vinegar
- 1/2 cup chopped strawberries
- Salt and pepper
Salad components
- Strawberries
- Spring mix
- Onions
- Feta
- Pistachios
Preparation
In one bowl add the coconut flour. In another shallow bowl whisk the eggs. Then in the final bowl add the breadcrumbs.
Slice the goat cheese into about 8-9 slices.
Coat each slice of goat cheese with flour, then dip into the egg mixture, and coat in breadcrumbs.
Place the coated goat cheese on a plate or cutting board and freeze for 15-20 minutes.
While the goat cheese is freezing, make the dressing by adding maple syrup, olive oil, balsamic vinegar, apple cider vinegar, chopped strawberries, salt, and pepper to a blender and mixing until smooth.
Remove the goat cheese from the freezer.
Heat a pan over medium heat and add olive oil.
Add the goat cheese and cook until browned, about 2-3 minutes per side.
Assemble the salad by combining spring mix, strawberries, onions, feta, and pistachios in a bowl.
Drizzle the vinaigrette over the salad and top with the fried goat cheese bites.
