Quinoa Salad with Mustard Dressing

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 bunch chopped arugula
  • 1 green onion chopped
  • 1 cup chopped strawberries
  • 1 cup fresh cranberries

Mustard sauce

  • 1/4 cup white vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil

Preparation

  1. In a pot, place quinoa, water, salt, pepper, and bay leaf. Cook on medium heat until boiling, then stir gently, cover, reduce heat, and cook until done. Let it cool and refrigerate for an hour.

  2. In a serving bowl, place arugula, green onion, cooked quinoa, strawberries, and cranberries.

  3. For the vinegar sauce, in a cup, place white vinegar, balsamic vinegar, salt, sugar, and pepper. Mix with a fork until sugar dissolves, then gradually add oil while stirring to make the dressing.

  4. Pour the sauce over the salad and serve.
