Easy Creamy Strawberry Tiramisu for Eight

Ingredients

  • 500 g strawberries
  • 70 g sugar
  • 3 tbsp lemon juice
  • 3 egg yolks (size M)
  • a pinch of salt
  • 500 g mascarpone
  • 250 g quark (20% fat)
  • 200 g heavy cream
  • 200 g ladyfingers
  • some cocoa powder for dusting
  • some strawberries for garnish

Preparation

  1. Wash, hull, and pat dry the strawberries

  2. Puree half of the strawberries with 20g sugar and lemon juice

  3. Cut the remaining strawberries into small cubes

  4. Beat egg yolks with the remaining sugar and salt until foamy for at least 2 minutes

  5. Briefly stir mascarpone and quark until smooth with a whisk

  6. Gently fold in the egg mixture

  7. Whip the cream until stiff and then fold into the cream mixture

  8. Cover the bottom of a baking dish (20 x 25 cm) with ladyfingers

  9. Spread half of the strawberry puree over the ladyfingers

  10. Add half of the mascarpone cream on top

  11. Sprinkle with half of the strawberry cubes and smooth out

  12. Distribute the remaining ladyfingers on top and press lightly

  13. Add the remaining strawberry puree and the remaining strawberry cubes

  14. Spread the remaining cream on top and smooth out

  15. Optionally, draw waves in the cream with a baker's comb or fork

  16. Chill for about 1 hour

  17. Just before serving, generously dust with cocoa powder and garnish with strawberries as desired

  1. This recipe is super light and delicious with a mixture of mascarpone and quark
