Easy Creamy Strawberry Tiramisu for Eight
Ingredients
- 500 g strawberries
- 70 g sugar
- 3 tbsp lemon juice
- 3 egg yolks (size M)
- a pinch of salt
- 500 g mascarpone
- 250 g quark (20% fat)
- 200 g heavy cream
- 200 g ladyfingers
- some cocoa powder for dusting
- some strawberries for garnish
Preparation
Wash, hull, and pat dry the strawberries
Puree half of the strawberries with 20g sugar and lemon juice
Cut the remaining strawberries into small cubes
Beat egg yolks with the remaining sugar and salt until foamy for at least 2 minutes
Briefly stir mascarpone and quark until smooth with a whisk
Gently fold in the egg mixture
Whip the cream until stiff and then fold into the cream mixture
Cover the bottom of a baking dish (20 x 25 cm) with ladyfingers
Spread half of the strawberry puree over the ladyfingers
Add half of the mascarpone cream on top
Sprinkle with half of the strawberry cubes and smooth out
Distribute the remaining ladyfingers on top and press lightly
Add the remaining strawberry puree and the remaining strawberry cubes
Spread the remaining cream on top and smooth out
Optionally, draw waves in the cream with a baker's comb or fork
Chill for about 1 hour
Just before serving, generously dust with cocoa powder and garnish with strawberries as desired

This recipe is super light and delicious with a mixture of mascarpone and quark
