Blueberry Crumble Bars
Ingredients
- 1 cup rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 cup coconut sugar
- 1/2 cup avocado oil or melted butter
- 2 cups blueberries
- 1/4 cup coconut sugar (for blueberry layer)
- 1 tbsp. avocado oil or melted butter (for blueberry layer)
Preparation
Preheat the oven to 350°F (175°C) and grease or line an 8x8-inch baking dish.
In a large bowl, whisk together the rolled oats, all-purpose flour, coconut sugar, and avocado oil/melted butter until the mixture is well combined.
In a separate small bowl, stir together the blueberries, coconut sugar, and avocado oil/melted butter to create the blueberry layer mixture.
Press down 2 cups of the crumble mixture firmly into the bottom of the baking dish.
Spread the blueberry layer mixture evenly over the crumble base.
Sprinkle the remaining crumble mixture on top of the blueberry layer.
Bake for approximately 45 minutes until the top is golden brown.
Allow the bars to cool before cutting them into slices, or serve them in bowls with ice cream or yogurt.
