Oatmeal Chocolate Chip Bars

Ingredients

  • 2 1/2 cups rolled oats (250g)
  • 2/3 cup coconut oil (125g)
  • 1/2 cup coconut sugar (60g)
  • 3 tablespoons maple syrup
  • 1/2 cup chocolate chips (75g)
  • Optional: 2 scoops of your favorite protein powder

Preparation

  1. Preheat the oven to 400°F/205°C and grease an ovenproof dish or tin (11"x7") with coconut oil.

  2. In a food processor, combine the rolled oats, coconut oil, coconut sugar, maple syrup, and protein powder (if using). Pulse until the mixture is combined and comes away from the sides of the food processor.

  3. Add the chocolate chips to the mixture and pulse briefly to mix them in.

  4. Pour the mixture into the greased ovenproof dish and use the back of a large wooden spoon to press it down evenly.

  5. Using a flat knife, score the mixture into 12 pieces.

  6. Bake in the oven for 10-12 minutes until the bars are just turning golden.

  7. Remove from the oven and immediately cut the bars into 12 pieces along the scored lines.

  8. Allow the bars to rest in the dish for 15 minutes to firm up (they will be very soft).

  9. Transfer the bars onto a wire rack and allow them to cool completely.
