Blueberry French Toast Casserole with Hawaiian Sweet Bread

Ingredients

  • 4 cups bread chunks (preferably Canyon Gluten-Free Hawaiian Sweet bread)
  • 1/2 tbsp cinnamon
  • 1/4 cup coconut sugar
  • 2/3 cup blueberries
  • 3 eggs
  • 1/2 cup almond milk
  • Butter (for topping)

Preparation

  1. Preheat the oven to 350F.

  2. Place 2 cups of bread chunks into the bottom of a small casserole dish, then add 1/3 cup of blueberries on top.

  3. Add 2 more cups of bread chunks and another 1/3 cup of blueberries.

  4. In a large bowl, whisk together the eggs, milk, cinnamon, and sugar. Pour the mixture evenly over the bread and blueberries.

  5. Top with extra blueberries and small chunks of butter.

  6. Bake for 35 minutes.

  7. Serve and enjoy!
