Coffee Buns

Ingredients

  • 3 tablespoons sugar
  • 1 egg
  • 1/2 cup warm milk (125ml)
  • 1 teaspoon lemon juice
  • 1.5 teaspoons yeast
  • 2 cups flour
  • Pinch of salt
  • 3 tablespoons unsalted butter (40g)

Filling

  • 1 stick salted butter, cut into 12 cubes (optionally dipped in sugar)

Topping

  • 1 egg
  • 1 tablespoon instant coffee dissolved in 1/2 teaspoon water
  • 70g unsalted butter at room temperature
  • 1/3 cup sugar
  • 1/2 cup flour

Preparation

  1. Whisk together sugar, egg, warm milk, lemon juice, and yeast.

  2. Add flour and salt, and knead the mixture.

  3. Finally, add unsalted butter and knead until smooth.

  4. Cover the dough and let it rise for 1 hour.

  5. Divide the dough into 12 balls, cover, and let rise for 20 minutes.

  6. Stuff each ball with a cube of salted butter, optionally dipped in sugar, reshape into balls, cover, and let rise again.

  7. For the topping, mix egg, instant coffee dissolved in water, unsalted butter at room temperature, sugar, and flour, then transfer to a piping bag and cover half of each ball.

  8. Bake in a preheated oven at 180-190°C from the bottom with fan.
