Creamy Vegan Oatmeal Breakfast
Ingredients
- 1 cup jumbo oats
- 2 cups almond milk
- 1/2 tsp vanilla extract
- 1 banana, halved lengthways
- 2 tsp coconut oil
- Optional sprinkling of coconut sugar
- 1/2 cup frozen mixed berries
- Maple (optional)
- 1/4 cup almonds, toasted chopped
- Peanut butter
Preparation
Add oats, almond milk and vanilla to a pan. Bring to a low boil then reduce to a simmer and cook for 5 to 7 minutes or to your taste.
Heat coconut oil in a non-stick pan. Option to dust banana with coconut sugar and fry for 1 to 2 minutes, turning once until slightly soft.
Add frozen berries to a mug of boiling water, allow to sit for 3 minutes then drain.
Add the porridge to a bowl and top with berries, caramelised banana, almonds, peanut butter and optional drizzle of maple.
