Homemade Braided Yeast Bread
Ingredients
- 500 grams bread flour
- 90 grams cold water (adjust as needed)
- 50 grams vegetable oil or butter
- 60 grams sugar
- 2 eggs
- 9 grams salt
- 8 grams dry milk
- 11 grams instant dry yeast
- 4 grams bread improver AS500
Egg wash
- Egg yolk
- Milk
- Sugar
- A pinch of salt
Preparation
Sift the flour three times and place it in a bowl.
Add the yeast, sugar, salt, and bread improver to the flour and mix well.
Add the cold water and mix for 1 minute, then add the eggs and oil or butter.
If the dough is too dry, add more water gradually and knead for 15 minutes until soft and smooth.
Shape the dough into a ball and let it rest for 10 minutes.
Divide the dough into 130-gram pieces, shape into balls, and let them rest for 15 to 20 minutes.
Roll out each piece with a rolling pin into a circle.
Braiding the dough into the desired braided shape.
Cover the shaped dough and let it rise for 45 to 60 minutes until doubled in size.
Prepare the egg wash by whisking together egg yolk, milk, sugar, and a pinch of salt, then brush it onto the risen dough.
Bake in a preheated oven at 180°C for electric or 200°C for gas for 15 to 20 minutes.
Tips
To test the yeast, mix it with a teaspoon of sugar, a tablespoon of flour, and warm water in a glass, cover, and wait 10 minutes until it activates before adding to the dough.
