Soft and Fluffy Turkish Poğaça

Ingredients

  • 2 cups warm milk
  • 1 cup vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet instant yeast (or 1 tablespoon)
  • 2 eggs
  • 4.5-5 cups flour

Topping

  • 1 egg yolk
  • 1 teaspoon molasses
  • Sesame seeds
  • Nigella seeds

Preparation

  1. First, place milk, sugar, and yeast in a mixing bowl and stir.

  2. Add the other ingredients in order and knead to form a soft dough that does not stick to hands, adding flour gradually.

  3. Cover and let rise for half an hour; using room temperature ingredients will speed up the rising.

  4. When the dough has doubled in size, knead again to deflate it.

  5. Tear off mandarin-sized pieces and shape into balls or desired shapes.

  6. Place on a parchment-lined baking sheet, spaced apart.

  7. Let rise in the pan for 30-45 minutes.

  8. Brush with egg yolk mixed with molasses and sprinkle with sesame seeds.

  9. Bake in a preheated oven at 180°C with top and bottom heat until golden brown.

  10. Remove from oven, cover with a clean cloth, and serve after resting.

Tips

  1. Pan rising is an important tip. This recipe yields about 2 trays of poğaça. You can also make a cheese-filled version.
