Homemade Eggs Benedict Brunch

Ingredients

  • 4 eggs
  • 2 English muffins or brioche-style bread or toasted bread
  • 4 slices of bacon or cooked ham
  • 150 grams butter
  • 1 tablespoon lemon juice
  • 2 egg yolks
  • Salt and pepper
  • Optional: chopped chives or parsley

Preparation

  1. Prepare the hollandaise sauce by melting the butter without burning it

  2. Beat 2 egg yolks with lemon juice over a double boiler

  3. Gradually incorporate the butter

  4. Season with salt and pepper and it's done

  5. Poach the eggs by bringing water to a boil with a splash of vinegar

  6. Create a gentle whirlpool and add the egg

  7. Cook for 2 to 3 minutes and remove with a slotted spoon

  8. Toast the English muffins

  9. Cook the bacon or ham until golden

  10. Assemble by layering bread, bacon, poached egg, and hollandaise sauce

  11. Decorate with herbs and enjoy

Tips

  1. To get perfect eggs, crack the egg into a small bowl and then carefully pour it into the water
