Vegan Gluten-Free Coffee Cake Muffins
Ingredients
- 1/3 cup melted coconut oil
- 1/2 cup coconut sugar
- 1 flax egg (1 tablespoon ground flax and 3 tablespoons water)
- 1 cup unsweetened applesauce
- 2 cups almond flour
- 1/2 cup tapioca flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
Crumb topping
- 1/2 cup (heaping) almond flour
- 2 tablespoons liquid coconut oil
- 1 teaspoon cinnamon
- 2 tablespoons coconut sugar
Preparation
Preheat oven to 350 degrees Fahrenheit.
Combine melted coconut oil with sugar, flax egg, and applesauce, then mix in all the dry ingredients.
Spoon the mixture into a greased cupcake pan to make 12 muffins.
Prepare the topping mixture, spoon it onto each muffin, and press down slightly.
Bake for 20-25 minutes until a toothpick inserted comes out clean.
