Vegan Sweet Potato Breakfast Bowls

Ingredients

  • 2 Medium Sweet Potatoes
  • 2/3 cup Unsweetened Plant-based Milk
  • 2 tbsp Ground Flax
  • 1 tbsp Nut Butter of choice
  • 2 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • Pinch of Salt

Optional toppings

  • Pomegranate
  • Pumpkin Seeds
  • Coconut Yogurt
  • Cacao Nibs
  • Granola

Preparation

  1. Preheat the oven to 400°F and bake the sweet potatoes until tender, about 45-60 minutes

  2. Allow the sweet potatoes to cool slightly, then scoop out the flesh into a bowl

  3. Mash the sweet potato flesh with unsweetened plant-based milk, ground flax, nut butter, vanilla extract, cinnamon, and salt until smooth

  4. Portion the mixture into containers for meal prep and refrigerate

  5. When ready to serve, reheat the mixture and add optional toppings
