Vegan Sweet Potato Waffles

Ingredients

  • 1 2/3 cups organic all-purpose flour
  • 2 tbsp yellow cornmeal
  • 2 tbsp coconut sugar or brown sugar
  • 1 tsp flax meal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 medium cooked sweet potato
  • 2 tbsp apple sauce
  • 1 1/3 cups soy or almond milk
  • 1 tsp pure vanilla extract
  • 1/3 cup melted coconut oil or vegan butter

Preparation

  1. Heat your waffle griddle.

  2. Combine dry ingredients with wet ingredients without over mixing the batter.

  3. Pour a couple of spoonfuls of batter into the waffle maker.

  4. Cook for a few minutes until waffles are crispy on both sides.

  5. Repeat with the remaining batter.

  6. Serve hot with coconut whip, pure maple syrup, and persimmons or other fruit.
