Vegan Sweet Potato Waffles
Ingredients
- 1 2/3 cups organic all-purpose flour
- 2 tbsp yellow cornmeal
- 2 tbsp coconut sugar or brown sugar
- 1 tsp flax meal
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 medium cooked sweet potato
- 2 tbsp apple sauce
- 1 1/3 cups soy or almond milk
- 1 tsp pure vanilla extract
- 1/3 cup melted coconut oil or vegan butter
Preparation
Heat your waffle griddle.
Combine dry ingredients with wet ingredients without over mixing the batter.
Pour a couple of spoonfuls of batter into the waffle maker.
Cook for a few minutes until waffles are crispy on both sides.
Repeat with the remaining batter.
Serve hot with coconut whip, pure maple syrup, and persimmons or other fruit.
