Vegetarian Omelette Stacker Breakfast

Ingredients

  • 3 egg omelette mix
  • Salt
  • Pepper
  • Half pack of squeakybeanveg Italian deli ham style slices
  • Spinach
  • 3 asda light cheese slices
  • Mushrooms
  • 1 egg for topping

Seasonings

  • Sea salt
  • Fresh chives
  • Chilli flakes

Preparation

  1. Beat the 3 egg omelette mix with salt and pepper.

  2. Cook the omelette in a single egg pan over medium heat and keep warm in a 100°C oven while preparing other components.

  3. Fry the mushrooms in a pan until golden and tender.

  4. Fry the additional egg until cooked to your preference.

  5. Layer the omelette with vegetarian ham style slices, spinach, cheese slices, and fried mushrooms.

  6. Top the stack with the fried egg.

  7. Sprinkle with sea salt, fresh chives, and chilli flakes before serving.
