Very Berry Antioxidant Salad with Raspberry Dressing

Ingredients

Dressing

  • 6 tablespoons red wine vinegar
  • 3 tablespoons maple syrup
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1/2 cup avocado oil
  • 1 cup fresh or frozen raspberries, thawed
  • 1 teaspoon poppy seeds

Salad

  • one bag of organic Arugula
  • sliced organic berries
  • avocado hearts
  • pepitas or hemp seeds

Preparation

  1. Blend all dressing ingredients except poppy seeds in a blender for 10 seconds.

  2. Add poppy seeds and pulse once or twice.

  3. Add salt and pepper to taste.

  4. Store the dressing in a glass jar in the fridge for up to 7 days.

  5. Arrange one bag of organic Arugula in a salad bowl.

  6. Top it off with sliced organic berries, avocado hearts, and add pepitas or hemp seeds.

  7. Drizzle with the freshly made dressing and dig in.
